1. Crockpot Thai Beef Stew
This Thai curry-turned-stew is simply amazing! I make similar curries on a regular basis, but usually with chicken and I never imagined how much better it would be after spending the night in a slow cooker. The meat gets so soft and tender and absorbs these Thai spices and Thai curry paste so harmoniously. If you like Thai food as much as I do you won’t want to skip this one.
