I’m not sure what it is about grilled food that makes it taste so great.
In culinary school we learned about the Maillard reaction, the browning effect that happens to toast, coffee, and food on the grill. But I think there’s more too it than that.
Maybe it’s the association with laughter, good friends, and fun in the sun.
No matter the explanation; the fact is that summer is here so it’s time to throw on some coals and get grilling! Here are some great Paleo grilled recipes to enjoy this summer!

It always drives me nuts to see those pre-fab shish kebabs in the deli section of my neighborhood’s fancy super market. I completely understand if you’re a busy parent or businessperson and it’s the convenient option, but kebabs are one of those things that are actually really fun to make, especially with the kiddies who can get creative and have some fun helping with the food prep. These ones are pretty simple, with a yummy and spicy Indian marinade plus sweet pineapple chunks to balance it out. Start there and if you have anything else to add – or a veggie that the kids aren’t reluctant to eat – go for it! (Photo credit: Amy of My Heart Beets.)
While I don’t usually cook with lobster at home, there is always that perfect special occasion (or simply celebrating the start of summer!). And nothing says fancy pants like a grilled lobster in your salad! Leave it to Sonia, the Healthy Foodie, to make a star Paleo grilled recipe like this one. The dressing is relatively simple and slightly Asian-flavored with ginger and lime. Also, Sonia includes nutrition facts at the bottom for people who like to know. With spicy and sweet flavors, as well as ginger, lime, and chili, this grilled chicken is sounding like an amazing East-West fusion dish! If you can’t wait for your order freeze dried strawberries to arrive (and don’t have any on hand) for the sauce, Candace (who guest blogged this recipe on Steph Gaudreau) recommends apple juice as an easy substitute. The rest of the required ingredients shouldn’t be hard to come by. The sauce serves as a dynamic and creative marinade for this grilled chicken, and is also Whole 30 appropriate. Awesome! Here’s a vegetarian-friendly side salad that will show you just how much you’ve been missing out on grilled fruits! The sweetness of summer stone fruits like peaches mixed with the charred smokiness that grilling provides makes for a magical combination. The buttery avocado gets the grilling treatment as well in this fantastic Mexican/ceviche-inspired side salad! (Photo credit: Angela from Seasonal and Savory.)
Easy, fast and intensely flavorful. What more could you ask from a delicious, grilled, game-day eat? It even has bacon! These red pepper poppers are spicy, meaty, and wrapped in mouth-watering bacon, the single ingredient that always makes everything better. While there aren’t too many ingredients here, the steps can take coordination – you should probably pre-cook your chicken and pre-grill your peppers before combining everything. Andrea easily lays out the steps though so just follow along and check out tips and notes to make these poppers. (Photo credit: Andrea from Pencils and Pancakes.)
