I often find it difficult to muster to motivation to make a decent breakfast in the morning, but end up suffering the consequence of my laziness around 10:30 when the hunger pangs return, full-throttle. I’ve realized the best habit to get into is to make a filling, healthy, protein-rich meal and it usually ends up saving me the trouble of desperately grabbing for potentially unhealthy snacks just a few hours later!

So what’s the best for my recurring hearty breakfast menu? I sometimes get tired of eating similar ethnic cuisines too many times back-to-back. Sushi, curry and Thai food are really only so wonderful when you space them out a bit. But the same just doesn’t hold true for Mexican food. I could eat it for breakfast, lunch and dinner, and if you told me that I could only eat one type of cuisine for the rest of my life, I would definitely choose Mexican!

There’s no better way to combine my unceasing satisfaction with Mexican food and my need to start the day off with a filling breakfast than cooking up a delicious breakfast burrito! And to share the love, we’ve got this short but sweet list of our favorite Paleo breakfast burrito recipes from around the web. Check out some cool variations on the classics and even egg-free recipes below!

1. Breakfast Pancake Burrito

Ingredients: coconut flour, walnut meal (or preferred nut meal), baking soda, baking powder, vanilla, smoked paprika, eggs, pure maple syrup, sea salt, butter or ghee.

2. Mexican Naked Burrito (Egg-Free)

Ingredients: beef mince, white onion, red chili, diced tomatoes, garlic, sweet paprika, cumin powder, coriander power, turmeric, ghee, Celtic salt or sea salt, sweet potatoes, smoked paprika, cumin powder, black pepper, olive oil, roasted red peppers, cucumber, spring onion, cilantro, lime juice.

Ingredients: eggs, onion, tomatoes, canned diced green chilies, red pepper, cilantro, cooked meat (steak, ground beef or shredded chicken), avocado, hot sauce or salsa.
