Banana Bread
This is another of George’s wonderful creations! You can find the full recipe at CivilizedCavemanCooking.com. How could I not make it when George kept telling me just how delicious this was, and rightfully so! I typically don’t buy bananas (they’re higher in sugar than most fruits), but I made an exception for this bread especially since there was no added sugar in it. I actually sent J out into the cold to buy some bananas just so I could make this recipe – totally worth the small effort!
The main ingredients are: bananas, almond butter (I substituted this with coconut butter the second time for my friends who are allergic to nuts), melted butter or coconut oil, and eggs. I highly suggest blending these in blender or vitamix as I tried the hand mixer way and it didn’t work too well!
After blending:
Then add in the coconut flour, cinnamon, baking powder, baking soda, vanilla extract (I used my own homemade one, recipe here), and sea salt. Mix well – I used a hand mixer for this part.
Pour into a 9 by 5 loaf pan (grease it first). Then I sprinkled some sliced almonds to make it look pretty on top.
Bake for 40 minutes on 350F. Check it’s done using a toothpick – the toothpick should come out clean after you’ve poked it into the bread.
It’s delicious with some coconut butter (or grassfed butter) spread on it, or just by itself!
