I’ve been super busy with work lately, but here’s a variation on my favorite salmon stew (original recipe here). It’s pictured with a pot of freshly brewed ginger basil tea (recipe here)!

Celery Cilantro Salmon Stew


  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes
  • Yield: 4 bowls 1x

Ingredients

  • 32oz chicken broth (or bone broth)
  • 2 salmon filets, diced
  • 2 Italian squash, diced
  • 4 button mushrooms, diced
  • 2 cups chopped celery
  • 1/2 cup chopped cilantro
  • salt and pepper (to taste)

Instructions

  1. Place all the vegetables with the broth into a pot and simmer for 15 minutes.
  2. Add the diced salmon and simmer for another 5 minutes.

This looks amazing. Should the salmon be added already cooked or raw to cook in the broth?

    The salmon can be raw (I’m sure cooked works ok too, but might get a bit overcooked).

Made this tonight and put the salmon in raw. It was great! The whole family enjoyed it. Next time I’ll probably add more button mushrooms.

i used your recipe for inspiration to make a curry salmon soup!! it was so good. i stuck with your base and then added a tsp of curry powder, half a can of coconut milk, and juice of a lime. it is so good!

I can’t eat mushrooms so is there anything else i can replace them with that will be just as good? thanks!

    You can just omit the mushrooms, or I often like to put in swiss chard or spinach (or other greens are also good).
