I spent an entire afternoon testing and perfecting this recipe (you can see all the photos of my tests at the bottom of the post), and this recipe came out the clear winner.  So, enjoy!

Like the name suggests, this 5-Min Microwave Paleo Chocolate Cake recipe is super fast and easy to make – in 5 minutes, you can enjoy Paleo chocolate cake again! And if you love this recipe, check out my microwave Paleo bread recipe as well (it’s also really easy!).

If you have concerns about using the microwave…

I have been concerned in the past too about using the microwave, and so I researched all the dangers that were claimed extensively and talked to scientists as well as other people in Paleo like Sarah Ballantyne, and I have not come across any credible scientifically-backed reasons to stop using the microwave. If you are concerned, then I’ve written about what I researched and my rationale for continuing to use the microwave as part of my cooking in this article here.

If you would prefer not to use the microwave for cooking, then that’s completely fine. I am not here to judge anyone, and I hope you likewise won’t judge me for my beliefs. We have compiled an extensive list of Paleo cake recipes here (most of which do not use the microwave), and so hopefully one of those delicious recipes will work for you instead.

STEP 1: Place chocolate chips into a mug.

I used these Enjoy Life chocolate chips (I found them cheapest at Thrive Market online). And use a mug that’s fairly smooth inside.

STEP 2: Melt chocolate in the microwave.

STEP 3: Add in the rest of the ingredients (almond flour, baking soda, coconut oil, and an egg).

STEP 4: Mix really well with a fork and push the mixture to the bottom of the mug.

STEP 5: Microwave on high power for 90 seconds (this may vary depending on your microwave). Cool. Then carefully flip out of the mug and serve or eat from the mug.

  1. Place the chocolate chips into a microwave-safe mug and microwave on high until it melts (approx. 30 seconds – make sure it doesn’t burn).
  2. Add the almond flour, baking soda, coconut oil, and egg to the mug and mix well with a fork. Push the mixture down to the bottom of the mug.
  3. Microwave on high for 90 seconds (this time may vary depending on the microwave oven).
  4. Let cool for a minute and enjoy.

Is it only lightly sweet, or more like a regular chocolate cake?
Also, what do you think about using coconut flour instead of almond?
