Paleo Chocolate Pistachio Truffles Recipe

  • 1 cup pistachios, unshelled
  • 1 1/2 tablespoons coconut oil, melted
  • 1 tablespoon agave or raw honey
  • 1 pinch coarse sea salt
  • 1 cup dark chocolate pieces


  1. Add pistachios to a food processor and process on high until pistachios are in small chunks.
  2. Into food processor, slowly drizzle coconut oil and honey. Also add salt and process on high for about 90 seconds.
  3. Divide mixture into tablespoon-sized portions. Squeeze and roll each portion into a compact ball.
  4. Melt chocolate in a double boiler (or microwave).
  5. Dip each pistachio ball into chocolate, shaking off any excess.
  6. Place truffles on a plate or baking sheet covered with parchment paper.
  7. Refrigerate until solid.
