A summertime twist on iced coffee, this is literally an iced coffee to enjoy.
- In a small bowl, combine the coffee granules to the boiling water, stirring constantly until fully dissolved. Set aside to cool slightly.
- Pour the almond milk into a separate medium size bowl. Add in the coffee mixture and honey to the bowl and stir well to combine. Pour an equal amount of the coffee/almond milk mixture into 6 popsicle molds (approx. 3.5oz / 100g capacity each). Place the popsicle mold in the freezer until completely solid.
- Remove the frozen popsicles from the molds and enjoy.
