Paleo Double Chocolate Cookies Recipe
I always get excited about a good cookie.
There was a gourmet cookie shop by my house when I grew up. They had the softest, chewiest, best cookies I have ever had in my life. The specialty sweets were a rare treat, probably due to the price for each cookie, but also because each day this small shop would only make a limited amount of each type of cookie. I would often settle for peanut butter or mint chocolate, but if you were lucky enough sometimes you would be there early enough to grab the most fabulous cookie of them all: the double chocolate.
So, that is why I am extra excited to have a Paleo double chocolate chip cookie recipe finally. Whenever I feel so inclined to put this recipe together, I am brought right back to those lucky childhood afternoons. And, let’s be honest, anything double chocolate is an automatic win.

Let’s get real here. There are not many things on this planet more enjoyable than chocolate. From childhood memories to having something to calm down after a long day, to just enjoying life, chocolate is a comfort in so many ways.
Having something that is all about chocolate is a dream. These double chocolate chip cookies make everything a little bit better. And, who couldn’t use that when the days of the Paleo diet become a struggle.
An Important Tip on Making These Cookies
Making cookies is a pretty straightforward process. In fact, it is one of the first things most of us learn to make at an early age. However, there is a vital piece in assembling this recipe that you should keep in mind.
It has to do with the egg and the melted ghee. Sometimes, when we melt ghee, in the microwave or on the stove, we will take it to a high temperature. If the ghee is too hot when it comes in contact with the egg you run the risk of cooking the egg. Just be aware that if the ghee is too hot to touch, it is probably too hot to add to the mixture quite yet.
Add Some Personal Touches
A cookie is a cookie, and it is an excellent vessel for many of our favorite ingredients. Here are a few Paleo ingredients that would be great additions to these double chocolate cookies:
- Shredded coconut
Delicious chocolate cookies with surprise chocolate chips.
- Preheat the oven to 350 F (175 C) and line a baking tray with parchment paper.
- In a large mixing bowl, combine all the ingredients except for the chocolate chips. Stir that in last.
- Form small balls from the dough and flatten into round cookies. Place on the lined baking tray (making sure to spread them out as they expand during baking).
- Bake for 10-12 min and allow to cool before enjoying.

A very important tip to bear in mind when whisking the wet mixture is to ensure the melted ghee isn’t piping hot as it could scramble the egg when mixing.
