Description
Delicious chocolate cookies with surprise chocolate chips.
Ingredients
- 1 1/4 cups (150 g) almond flour
- 1/4 cup (28 g) coconut flour
- 1 Tablespoon unsweetened 100% cacao powder
- 1 teaspoon (4 g) baking soda
- pinch salt
- 1/4 cup (2 oz or 60 g) coconut sugar
- 1 Tablespoon (15 ml) honey
- 2.5 oz dark chocolate chips (70g)
- 1 medium egg, whisked
- 1 teaspoon (5 ml) vanilla essence
- 2 Tablespoons (30 ml) ghee, melted
Instructions
- Preheat the oven to 350 F (175 C) and line a baking tray with parchment paper.
- In a large mixing bowl, combine all the ingredients except for the chocolate chips. Stir that in last.
- Form small balls from the dough and flatten into round cookies. Place on the lined baking tray (making sure to spread them out as they expand during baking).
- Bake for 10-12 min and allow to cool before enjoying.

A very important tip to bear in mind when whisking the wet mixture is to ensure the melted ghee isn’t piping hot as it could scramble the egg when mixing.
