- 3 eggs, whisked
- 1 leek, chopped
- 1 tablespoon of coconut aminos
- Salt to taste
- Coconut oil to stir-fry with
- Pour 2 tablespoons of coconut oil into a pan on a medium heat.
- Drop in the whisked eggs and cook into a scramble.
- After the eggs are pretty solid, add in the chopped leeks.
- Cook for 10 minutes until the leeks are tender.
- Add the coconut aminos and salt to taste.
