Description
A lovely, simple soup to be enjoyed on a chilly evening.
Ingredients
- 2 Tablespoons (30 ml) of olive oil
- 1 red onion (110 g), peeled and finely diced
- 2/3 cup (50 g) of fresh ginger, peeled and finely chopped
- 8 carrots (400 g), peeled and diced small
- 4 cups (960 ml) of warm chicken broth
- salt and freshly ground black pepper
- chopped chives, to garnish
Instructions
- In a large pan, heat the olive oil and add the onions, ginger, and carrots. Saute the mix until onions are translucent, stirring frequently. Make sure you do not burn the mixture.
- Add the chicken broth and bring to a low simmer. Cover the pan and cook until the carrots are softened, approximately 35 minutes.
- Remove from heat. Use a hand blender to blend until the mixture reaches a smooth soup consistency. Season with salt and pepper.
- Garnish with chives and serve warm.
