Paleo Ginger Carrot Soup Recipe

Description

A lovely, simple soup to be enjoyed on a chilly evening.


Ingredients

  • 2 Tablespoons (30 ml) of olive oil
  • 1 red onion (110 g), peeled and finely diced
  • 2/3 cup (50 g) of fresh ginger, peeled and finely chopped 
  • 8 carrots (400 g), peeled and diced small
  • 4 cups (960 ml) of warm chicken broth 
  • salt and freshly ground black pepper
  • chopped chives, to garnish

Instructions

  1. In a large pan, heat the olive oil and add the onions, ginger, and carrots. Saute the mix until onions are translucent, stirring frequently. Make sure you do not burn the mixture. 
  2. Add the chicken broth and bring to a low simmer. Cover the pan and cook until the carrots are softened, approximately 35 minutes.
  3. Remove from heat. Use a hand blender to blend until the mixture reaches a smooth soup consistency. Season with salt and pepper.
  4. Garnish with chives and serve warm.
