Green Beans and Apples – Curry Stir Fry

Ingredients

  • 12 oz green beans (fresh or frozen)
  • 1 green apple, cored and sliced thinly
  • 1 clove garlic, minced
  • 1/2 teaspoon curry powder
  • salt to taste
  • coconut oil to cook in

Instructions

  1. Boil the green beans until tender (you can parboil them if you prefer crisper beans).
  2. Drain the boiled green beans.
  3. Add 1 tablespoon of coconut oil into a skillet (or saucepan). Add into the skillet the green beans and apple slices. Stir fry until the apples are tender (5-10 minutes).
  4. Stir in the minced garlic, curry powder, and salt.
