I wasn’t too keen on getting a pressure cooker because I loved my slow cooker so much, but I have to say that I’m so glad I did get one!

We bought this Instant Pot from Amazon around 5 months ago, and it’s been put to some amazing uses – like making this super tender beef short ribs recipe.

What’s so amazing about this recipe is how easy it is: dump the meat, onion, and spices into the Instant Pot pressure cooker pot, press a button, and wait to eat it.  While I still love my slow cooker, it is nice to be able to eat what you put into the pressure cooker the same night (rather than waiting 8+ hours).

You can use boneless short ribs or short ribs with the bone in it (remove the bone if you prefer) or even regular beef stew meat.

Press the Meat/Stew button on the Instant Pot and add time to the timer so that it shows 45 minutes.

How To Eat These Paleo Beef Short Ribs?

You can store the cooked beef short ribs in the fridge and heat them up for meals. Eat them by themselves, sauteed with other vegetables or on top of a veggie bowl like this:

  1. Place all the ingredients into the Instant Pot pressure cooker.
  2. Press the Meat/Stew button and then set the timer for 45 minutes.
  3. (The pressure cooker takes a few minutes of prep to get ready and then a few minutes to bring the pressure down, so the total cook time is closer to 1 hour.)
