Ingredients
- 2 eggs, hard boiled and peeled
- 1/2 avocado
- 10 grape or cherry tomatoes, halved
- handful of blueberries
- 1 head of romaine lettuce
- 2 Tablespoons olive oil
- drizzle of balsamic vinegar
- salt and pepper to taste
Instructions
- Chop up the eggs and cube the avocado.
- Toss all tomatoes, blueberries, and romaine lettuce with the olive oil, balsamic vinegar, and salt and pepper.
- Add the egg and avocado pieces and gently toss again.
