Egg Fried Zucchini

  1. Thinly slice the zucchini.
  2. Whisk the 2 eggs and add salt to the mixture.
  3. Place the zucchini slices into the egg mixture and coat the slices with the mixture.
  4. Drop the slices and the mixture into a pan with the coconut oil.
  5. Cook until the zucchini slices soften and the eggs are cooked.
