I LOVE slow cookers, and I think they’re a fantastic device to help us all stay Paleo even during busy periods (see the post on my 3-step process to staying Paleo here).

So, here’s a quick (prep time is practically nil!) and simple slow cooker roast recipe.

After it comes out of the slow cooker, you can just slice it and eat it, or you can store it and use it in sautés, salads, and soups throughout the week. One of my favorite beef sautés is Paleo fajitas (recipe here).

Ingredients

  • 3 lb beef roast
  • 1 cup red wine
  • 2 Tablespoons salt (optional)
  • 2 teaspoons pepper

Instructions

  1. Place all the ingredients into the slow cooker and cook on the low setting for 10 hours.

  • Serving Size: 1/2 lb of roast
