Bacon Avocado Explosion
Ok, I know this looks like guacamole, and to be fair, it does taste a bit like guacamole too, but it’s actually a bacon avocado explosion that I threw together this evening! I was pondering what to do with the avocados that were ripening on my kitchen counter when the idea of crunchy bacon bits flashed across my mind. Avocado by itself does not have a strong taste, so what better flavoring than bacon? Are you following me? Well, regardless, the word, “bacon” should have hooked you!
So, I put in 2 avocados, 1 diced tomato, 1 chopped jalapeno, and the juice from 1 small lemon (around 2 tablespoons).
Then I crumbled up 5 slices of crispy bacon I had just finished cooking.
And that’s it, no other flavoring was needed (no salt, no pepper, nothing). I really liked how simple it was – all the flavors came out and nothing was too overpowering (although you can clearly taste the bacon!). It makes a great snack or side dish. And here’s the photo this bacon dish inspired me to create.

Ingredients
- 2 avocados, mashed
- 1 tomato, diced
- 1 jalapeno pepper, finely chopped
- 2 tablespoons of freshly squeezed lemon juice
- 5 slices of crispy fried bacon, crumbled
Instructions
- Mash up the avocado.
- Add the diced tomato, finely chopped jalapeno, lemon juice, and crumbled bacon.
- Mix well.
