Fried Sweet Plantains

Ingredients

  • 2 ripe plantains
  • coconut oil for frying

Instructions

  1. Peel the plantains and cut into 3 chunks lengthwise. Thinly slice each chunk to form long thin strips (not round slices).
  2. Place 4 tablespoons of coconut oil into pan on low heat.
  3. Place the plantains strips into the pan and cook gently.
  4. Turn the plantain strips after 10-15 minutes and cook the other side.
  5. Keep cooking and turning for 30-40 minutes until the plantains are soft.
