Honey Mustard Chicken Thighs by The Paleo Kitchen
I’ve been a fan of George’s (Civilized Caveman Cooking) and Juli’s (PaleOMG) sites for a long time, and so I was really excited when they decided to work together on a cookbook, The Paleo Kitchen.
They posted one of their delicious recipes (Cinnamon Chocolate Swirl Banana Bread) from The Paleo Kitchen here a few months ago, and I know a lot of people emailed me because they loved the recipe. So, I went and tested one of their recipes for dinner last night. It was one of the really easy ones (because I’m currently limited to the stuff they sell in a Tesco Express – a tiny supermarket in Edinburgh).
The Honey Mustard Chicken Thighs recipe is super straight forward and uses a few simple but flavorful ingredients (AIP-friendly if you switch the dijon mustard to coconut aminos!).
First, there’s the marinade for the chicken (using lemon juice, olive oil, and garlic powder):
Then you cover the chicken in the marinade (I used chicken breast instead of chicken thighs because I couldn’t find chicken thighs at the small supermarket).
And while the chicken is roasting away in the oven, there’s a nice sauce to you make by mixing together raw honey, dijon mustard (switch to coconut aminos for AIP), fresh garlic, and fresh thyme. (I couldn’t find any fresh thyme, so I used some fresh basil leaves instead, and it worked great!)
And here’s the end dinner (with some boiled sweet potatoes and kale salad – the honey mustard sauce went well with the kale too).
