Ingredients
- 7 oz (200 g) dark chocolate
- 1/2 cup (120 ml) ghee
- 6 egg, yolks and whites separated
- 1/2 cup (110 g) coconut sugar
Instructions
- Place the chocolate and ghee in a large bowl and place over a pot of warm water. Stir continuous until melted and combined.
- Separate the egg whites and yolks.
- Add the chocolate and ghee mixture to the 6 egg yolks (be careful because the chocolate mixture can be pretty warm and can cook the egg yolks). Mix well with a fork so that there are no bits of unmelted chocolate.
- In a separate bowl, use an electrical whisk to beat the 6 egg whites until it forms peaks. Then add in the coconut sugar and keep whisking until the sugar combines into the mixture.
- Add the chocolate mixture into the egg whites and fold in with a spatula.
