Description

Enjoy clean eating all the way with these triple-decker club sandwiches.


Ingredients

  • 1 Tablespoon (15 ml) of olive oil
  • 1 chicken breast (200 g)
  • 4 slices of bacon (112 g), cut in half
  • 6 slices of bread (recipe here)
  • 4 soft lettuce leaves
  • 1 large tomato (180 g), sliced thin
  • Salt and freshly ground pepper, to taste

Instructions

  1. Preheat the oven to 355°F (180°C).
  2. Add the olive oil in a large skillet over medium-high heat. Place the chicken in the skillet and cook until golden on both sides. Place the chicken on a rimmed baking tray and continue baking in the oven until cooked through with an internal temperature of 160°F (71°C), about 15 minutes. Remove the chicken from the oven and allow to cool slightly. Slicing into thin strips and season the chicken strips with salt and freshly ground pepper, to taste, and set aside.
  3. Meanwhile, in the same skillet used to cook the chicken, cook the bacon slices until crispy. Remove the bacon from the skillet and place on a paper towel-lined plate to drain.
  4. Place 4 slices of bread on a large cutting board or on 4 plates.
  5. Place the soft lettuce leaves onto each of the 4 bread slices and place an equal amount of tomato slices on the lettuce leaves. Top the sliced tomatoes with the sliced chicken and two pieces of bacon.
  6. Carefully place 2 of the filled bread slices on top of the other 2 filled bread slices. 
  7. Place the remaining  5th and 6th plain bread slices on top of the other 2 filled sandwich layers. Cut each sandwich in half to make 4 triple-decker sandwiches.
