Description

This classic soup is flavorful, easy, and budget-friendly.


Ingredients

  • 3 1/2 cups (840 ml) of good quality chicken broth
  • 2 teaspoons (10 ml) of gluten-free tamari sauce
  • 1 thumb-sized piece of fresh ginger, peeled and sliced
  • 3 medium eggs (132 g)
  • 4 green onions (20 g), sliced to garnish

Instructions

  1. Heat the chicken broth in a pan over low heat. Add the tamari and ginger. Simmer on low for 2-3 minutes.
  2. Strain the stock into a clean pan and discard the ginger. Let the broth continue to simmer over low heat while you whisk the eggs in a separate bowl.
  3. Once the eggs are whisked, remove the broth from heat and slowly pour the eggs into the broth, stirring gently.
  4. Top with green onions and serve immediately.
