Description
This classic soup is flavorful, easy, and budget-friendly.
Ingredients
- 3 1/2 cups (840 ml) of good quality chicken broth
- 2 teaspoons (10 ml) of gluten-free tamari sauce
- 1 thumb-sized piece of fresh ginger, peeled and sliced
- 3 medium eggs (132 g)
- 4 green onions (20 g), sliced to garnish
Instructions
- Heat the chicken broth in a pan over low heat. Add the tamari and ginger. Simmer on low for 2-3 minutes.
- Strain the stock into a clean pan and discard the ginger. Let the broth continue to simmer over low heat while you whisk the eggs in a separate bowl.
- Once the eggs are whisked, remove the broth from heat and slowly pour the eggs into the broth, stirring gently.
- Top with green onions and serve immediately.
