Paleo Strawberry Passion Fruit Drink Recipe [Paleo, AIP]

What are passion fruits and how to use them in drinks?
If you’ve never used passion fruits before, they’re a fragrant fruit that has a fairly hard and brittle dark red or purple colored outer shell.
This shell has a wrinkled look when the passion fruit is ripe.
When you cut open the passion fruit, you’ll find a bright yellow gooey flesh with dark crunchy seeds that are edible.
How to make passion fruit juice:
It’s easy to make passion fruit juice from the fruit. You just need a strainer. I used a tea strainer for this as it was a good size mesh.
Just scoop out the passion fruit flesh and use a spoon to press it into the strainer.
2 passion fruits typically yield about 25ml or 1 oz of juice.
Paleo Strawberry Passion Fruit Drink Recipe
Once you have the passion fruit juice made, it’s really easy to make this Paleo drink.
Just chop up some strawberries for the flavor and color and mix all the ingredients together in a glass.
Add ice to your Paleo drink and serve.
You can also make a larger batch of this recipe in a pitcher and serve at BBQs or at parties.

Ingredients
- 2 Tablespoons (30 ml) passion fruit juice (approx. from 2 passionfruit)
- 1 teaspoon (5 ml) raw honey (optional)
- 1 strawberry, chopped
- 5 mint leaves, lightly crushed
- 7–8 oz (200 ml) water (or sparkling water)
- 1 teaspoon (5 ml) fresh lemon juice
- 4–5 ice cubes
