46 Super Easy Paleo Recipes

Post by Lucha: World traveler, culinary student and Media Director at Paleo Flourish Magazine. Lucha will try most food but prefers Indian, Thai and Mexican food above all else. She is currently either cooking, eating, grocery shopping, or browsing recipes on Pinterest.
As I learned traveling through France…some of the best foods are the simplest foods. With just a few good ingredients, you can create some absolutely mouthwatering feasts.
And the same applies to the Paleo diet. You can make some really delicious but super easy paleo recipes, and below we’ve compiled 46 of our favorites.
All of these easy Paleo recipes have very few ingredients and some of them take only a few minutes to make. So, if you’re tired or don’t have enough time to cook a complicated meal, then choose one of these recipes to help you out.
Top 7 Easy Paleo Recipes
1. Basil & Tomato Eggs

This is a very filling vegetarian breakfast that only takes a few minutes to prep and is a great recipe to have on hand for rushed weekday mornings! (Photo credit: Caralee from Real Food Pledge.)
Ingredients: eggs, onion, garlic clove, large tomatoes, fresh basil, chilli flakes, olive oil, salt & pepper.
2. Buffalo Chicken Salad (Primal)

This salad works great as a main dish. I love the mix of hot sauce with yogurt, but note that this recipe is Primal unless you sub the yogurt with mayonnaise. (Photo credit: Annie of Worthy Pause.)
Ingredients: chicken, red or yellow bell peppers, Greek yogurt (sub with mayo for Paleo), garlic powder, celery salt, green onions, optional blue cheese, and celery.
3. Paleo Chicken Fingers

A great starter or lunch, these tasty “breaded” chicken fingers would go great with a quick salad. (Photo credit: Sarah, The Paleo Mom.)
Ingredients: chicken tenders, egg, almond meal, salt, paprika, ground coriander seed, ground cumin seed.
4. Quick and Easy Huevos Rancheros (PRIMAL – OPTIONAL)
You had me at huevos – I’m a huge fan of anything Mexican! This can work for breakfast or any meal really, but if you don’t eat Primal then be sure to hold the cheese.
Ingredients: onion, jalapeño, ghee or butter, eggs, tomato, avocado, grated Mexican cheese.
5. Easy Thai Chicken
This is a great standalone meal for anyone who loves Thai cooking.
Ingredients: chicken breast, garlic, onion, white mushrooms, carrots, zucchini, coconut milk, green curry paste, salt, red chili pepper slices, coconut oil.
6. Figs & Pancetta
I don’t cook a lot with figs but I find them to have an air of elegance, so if you’re having a party and want to look like you put a lot of effort into the hors d’oeuvres (even though this one takes no time at all) then go for these figgy bites!
Ingredients: black figs, fresh basil, slices pancetta or prosciutto, olive oil, balsamic vinegar.
7. Baked Eggs in Portobello Mushroom Caps
I think this recipe is such a cool and original idea, and it’s also so versatile! It can be a starter, a party hors d’oeuvre or even a hearty breakfast!
Ingredients: eggs, Portobello mushroom caps, slices of prosciutto, black pepper, fresh parsley or thyme, olive oil.

Microwave Paleo Bread
This is a favorite with pretty much everyone that tries it. So if you’ve been missing bread, then give this 5-minute Paleo bread recipe a try!
Ingredients: almond flour, baking powder, salt, egg, ghee (or coconut or olive oil).
Super Fast Paleo Avocado Salad

This recipe almost sounds too easy, but it’s a delicious and simple way to eat avocado.
Ingredients: avocado, extra virgin olive oil, balsamic vinegar, salt.
Easy Bacon Brussels Sprouts

This recipe takes a bit longer to make, but it’s not much work at all. And these 2 ingredients combine together so well, especially since the Brussels sprouts crisp up in the bacon fat.
Ingredients: Brussels sprouts, bacon.
Chocolate!! Avocado Paleo Smoothie

Paleo smoothie recipes are always easy and fast, and this one is no different. But this combination with the frozen banana and the avocado makes a really creamy and delicious drink.
Ingredients: avocado, frozen banana, frozen (or fresh) raspberries, unsweetened cocoa powder, almond or coconut milk.
Paleo Guacamole Burger Recipe

You can probably figure out this recipe just by looking at the photo – it’s that simple. And it can be even faster to make if you purchase a Paleo guacamole from the store (like Wholly Guacamole).
Ingredients: burger patty (made from ground beef, or chicken, or turkey, or pork, etc), egg, guacamole.
