Paleo Guacamole Burger Recipe
Saturday morning started with a really exhausting crossfit workout (wod was Helen), and so I needed something high in protein for brunch. Of course, it also had to be delicious! Having just bought some nice and ripe avocados the previous day, guacamole burgers seemed to be the perfect idea!
We made the burgers the day before. It’s easier just to grill a bunch of burgers all at once and store them individually in the fridge to take to work or to eat whenever. It’s a quick and cheap solution to the age old question of “what to eat!” Then to prevent the boredom of eating the same thing too many times in a week, we pair the burger with various simple condiments like kimchi, salsa or guacamole.
To make the guacamole, follow this simple recipe here.
Fry an egg in some coconut oil. I fried two here as I was making two burgers.

Then simply heat up your burger (in the oven or microwave), place the egg on top, and then place the guacamole on top of the eggs. Nutritious and delicious!
