I eat a fair number of eggs – it’s a super fast and easy breakfast (especially with a few strips of bacon). But I’ve always had trouble making perfect over easy eggs (which is how I like them) until Jeremy’s mom taught me this simple trick!

What Are Over Easy Eggs?

The basic definition of over easy eggs is that both sides of the egg must be cooked but the yolk must still be runny.

How To Cook Over Easy Eggs – Video

Step 1: Place a frying pan on medium heat. Add 1-2 tablespoons of coconut oil or avocado oil so it coats the pan.

TIP: make sure the heat isn’t too high or too low – compare to the photo.

Step 2: Crack an egg carefully into the frying pan (crack into a bowl first if it’s easier).

TIP: crack the egg on a flat surface rather than an edge. You can also cook multiple eggs at the same time.

Step 3: Place a lid over the frying pan and cook for 2 minutes.

TIP: the cooking time may vary slightly depending on how many eggs you cook in the same pan as well as how hot your pan gets.

Step 3: Place a lid over the frying pan.

Step 4: Flip when the white is almost completely solid and keep the lid off.

Step 5: Cook for 10 seconds more and remove egg from pan immediately.

TIP: don’t leave the eggs in the pan as they’ll keep cooking.

Serve on top of a salad or with some delicious slices of bacon for breakfast.
