Avocado Cucumber Ginger Salad Recipe [Paleo, Keto, AIP]

This is a super simple salad for summer. The cucumber and ginger make it really refreshing, and the avocado adds in some extra healthy fats.

This recipe can be a side dish or a quick snack. It takes 5-minutes to make, and you can use your leftover cucumber and avocado from making another dish (like this tuna salad recipe).

We find this recipe tastes better with sesame oil (and in case you’re wondering if sesame oil is Paleo, check out this article), but you can also use olive oil instead.

One of the best things about this recipe is that it’s Paleo, Keto, and AIP (if you use olive oil and omit goji berries).

Here are the step-by-step instructions and photos for this recipe. And at the bottom of this post is a recipe box with a print option.

Step 1: Peel and dice the cucumber into small pieces.

Gogi berries are not AIP, are they?

    Louise Hendon - August 4

That’s correct, goji berries are not considered AIP, which is why they should be omitted if you’re on AIP.
