Baked Egg in Avocado Recipe – Step-by-step Instructions and Photos
Step 1:
Preheat oven to 400 F (200 C).
Step 2:
Slice a ripe avocado in half and remove the stone.
Step 3:
Crack an egg into a bowl. Carefully scoop the yolk out without breaking it and place it in the avocado half. Crack another egg into the bowl and place that yolk into the other avocado half.
Step 4:
Wrap each avocado half with aluminum foil to prevent spillages and prevent the outside of the avocado getting burnt. Pour a teaspoon of olive oil over each egg yolk in avocado.
Step 5:
Bake in the oven for 12 minutes. The egg yolks will be soft but not runny when cooked.
Step 6:
Sprinkle salt and pepper and whatever spices you like over it and enjoy.
