Blackberry Jello July 4th Dessert Recipe [Paleo, Keto, AIP]
To celebrate Independence Day in the United States this year, we thought you might enjoy this easy Paleo July 4th dessert recipe. We created this blackberry jello dessert recipe so that it’s not only Paleo and dairy-free, but also Ketogenic and AIP-friendly. So it’s perfect even if some of your guests have specific dietary requirements.
It’s also simple to make, looks great, and delicious to eat.

Paleo Blackberry Jello July 4th Dessert Recipe
Step 1
Place the blackberries into a blender. (You can use blueberries instead – see below for photos.)

Step 2
Add the lemon juice into the blender as well. If you prefer to make this dessert sweeter, then add in some honey into the blender as well.

Step 3
Mix some gelatin in water. Dissolve it well and add it to the blender as well.

Step 4
Blend well.

Step 5
Divide the mixture between the champagne glasses (or you can use other glasses instead).

Blueberries instead…
There are very few naturally occurring blue foods so blueberries and blackberries are the best options for the bottom blue layer to this dessert. If you find blackberries hard to find, then try using blueberries instead – they come out a bit lighter in color than when using blackberries. But remember to add in the lemon juice still as it prevents any oxidization so the blueberries preserve their color and don’t go brown after they’ve been blended.




Step 6
Place into the fridge for 2 hours to set. Shake the glass gently to make sure it’s set properly.

Step 7
For the white layer, use coconut yogurt or coconut cream. Pour the coconut yogurt/cream into the glasses carefully so it doesn’t touch the sides of the glass to keep dessert looking pretty when served. Then place into fridge to set again for 1 hour.


Step 8
Dice up your strawberries for the top red layer.


Step 9
Carefully spoon the diced strawberries on top of the coconut layer.

Ingredients
- 1/3 cup blackberries (approx. 15) or blueberries
- 1 teaspoon fresh lemon juice
- 2 Tablespoons water
- 1 Tablespoon gelatin
- 1 teaspoon honey (optional – omit for keto)
- 6 Tablespoons coconut yogurt or coconut cream
- 4–6 strawberries, diced small
Instructions
- Mix the gelatin with the water.
- Place the blackberries, lemon juice, (honey), gelatin, and water into a blender and blend well.
- Divide between 2 champagne glasses and place into fridge for 2 hours to set.
- Pour the coconut yogurt or cream on top of the set jello as the second layer and place back into fridge to set for 1 hour.
- Finally add the diced strawberries on top and serve.
