Paleo Avocado Peach Prosciutto Salad Recipe
I’ve been loving salads, and if you have fresh produce readily available then I highly suggest enjoying delicious salads for lunch or dinner. They’re so quick and easy to put together, and if you use a combination of some fruits, meats, and salad greens, then you can get a delicious and healthy Paleo salad recipe.
Ingredients in Paleo Avocado Peach Prosciutto Salad Recipe
Salad Greens
Start with your salad greens. I used baby kale leaves for this Paleo salad recipe, but you can use spinach, arugula leaves, or some other salad leaves.
Peach
Dice a peach into small pieces. You can use another fruit instead like an apple or pear (or use a handful of berries for a salad lower in carbs).
Prosciutto slices
I added a few prosciutto slices into the salad, but if you don’t have prosciutto available, then use ham slices instead.
Avocado
Take a ripe avocado and remove the stone and dice up half of the avocado.
Salad Dressing
For the salad dressing, I like just using extra virgin olive oil and lemon juice. Most people think it’s too simple but honestly it’s delicious and allows the flavor of the fresh produce to come through instead of it being drowned in salad dressing.
I also sprinkled in a bit of sea salt for extra seasoning.
Toss the Salad Ingredients
Toss all the ingredients together and enjoy.
Enjoy with a glass of water flavored with citrus fruit ice cubes. I chop up oranges, lemons, limes and freeze them (place them into a zip lock bag). Then I use them as ice cubes to cool and flavor my water.
