- Scoop out the insides of the hachiya persimmon and place into a blender with the water, vanilla, honey, and gelatin.
- Blend until smooth.
- Pour into small ramekins and set in the fridge for 3+ hours.
I love getting more gelatin into my diet, and making a nice jello dessert is an easy and delicious way.

Start with a ripe hachiya persimmon.
Scoop out the insides of the persimmon.
Pour the mixture into small ramekins or cups (recipe makes approx. 2 cups).
Place into fridge to set for 3+ hours and enjoy!
