Banana bread is one of my favorite things to bake because there are so many different variations. You can find recipes for vegan banana bread, gluten-free banana bread and now, Paleo banana bread. Our banana bread recipe is elegant in its simplicity. It only takes one bowl and ten minutes of prep time. It cooks in only 45 minutes, which is exactly the right amount of time to wash that bowl and make a cup of coffee. That’s right, in less than one hour you could be enjoying a warm slice of grain-free banana bread. Banana bread is best with friends and family. This recipe serves ten so it’s perfect for sharing with your friends, coworkers, and loved ones.

Five Fun Facts About Bananas

  1. The bananas found in the supermarket today are a completely different variety than those found there 70 or 80 years ago. The preferred variety of that time was called the Gros Michel, but it was wiped out in the 1960s and replaced with the banana we know and love which is the Cavandish banana.
  2. The fibers in the banana plant can be used to make paper or even fabric!
  3. Bananas are the 4th most popular agricultural product in the world. More than 100 billion bananas are sold and eaten every year!
  4. Banana plants can grow up to 25 feet tall, but they are not technically considered a tree. In fact, the banana plant is officially classified as an herb! It is in the same family as lilies and orchids.
  5. Bananas are packed with antioxidants and these antioxidant levels remain high in fruits which are ripe and ready to eat, which is good for all of us because no one wants to eat unripe bananas for the health benefits! [1]

Two Methods for Handling Unripe Bananas

  • The Paper Bag Method – If you know that you want to make banana break in a few days, you can place your unripe bananas in a brown paper bag, preferably along with a well ripened banana or apple. In a day or two, your bananas should be ripened to perfection.
  • The Oven Method – On the other hand, if you need banana bread immediately, you can bake your unpeeled unripe bananas on a foil-lined cookie sheet at 350 for 15-20 or until they turn black. Once cool, scoop the banana out of the peel and proceed with the recipe as written.

  1. Preheat oven to 350 F (175 C).
  2. Grease a loaf tin (size 12-Inch x 4.4-Inch x 2.8-Inch).
  3. Mix all the ingredients together and pour into the loaf tin.
