This is an easy mash recipe – it doesn’t even need cooking! It can be made from the puree left over from making these ice-cubes or you can make it fresh following the recipe below and drink the juice.

How to Make Chilled Cucumber Mash

Step 1: Place the cucumber, basil, lime juice, and water into a blender and blend well.

I used fresh purple basil in this recipe – it’s beautiful and fragrant!

Step 2: Squeeze the liquid out of the puree (use a strainer). Mix the sesame oil, garlic powder, and salt into the cucumber mash.

Uses for the liquid: Drink it as a nice refreshing juice or use it to make ice cubes – see this recipe.

Ingredients

  • 1 cucumber (12-13 oz) – peeled and cut into large chunks to fit into blender
  • 5 small basil leaves (or 3 large leaves)
  • Juice from 1/4 lime
  • 1/4 cup water to get blender going
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic powder or to taste
  • Salt to taste

Instructions

  1. Place the cucumber, basil, lime juice, and water into a blender and blend well.
  2. Using a strainer, squeeze the liquid out of the cucumber mash.
  3. Mix in the sesame oil, garlic powder, and salt.
  4. Enjoy chilled!
