I was more than a bit skeptical when Jeremy announced that adding guacamole to his scrambled eggs was his new favorite breakfast dish, but when I tried it, I had to admit, it was surprisingly delicious!

Guacamole Topped Scrambled Eggs [Keto, Low Carb, Paleo]

Step 1: Make scrambled eggs – follow this recipe for really soft and moist scrambled eggs.

Step 2: Make or buy guacamole – follow this recipe if you want to make it. Or buy guacamole from the store – I used Wholly Guacamole (because it has pretty good ingredients and tastes good!).

Step 3: Place a large scoop of guacamole on top of your scrambled eggs and eat together.

  1. Place the coconut oil into a pan. Add the eggs and scramble over a low heat.
  2. Place the scrambled eggs into a bowl and top with the guacamole. If you want, you can add salt.
