There is something captivating about mini versions of our favorite foods. Just look at the popularity of cupcakes and mini quiches! If you can make a tiny version of a classic recipe, someone has probably done it. Pancakes are one of the easiest foods to give a mini makeover, no special equipment needed! Plus, going mini can have more than one benefit. These Paleo matcha silver dollars (mini pancakes) are adorable and easier to flip than full size pancakes. It’s a win win!

What Are “Silver Dollar” Pancakes?

Every culture seems to have its own take on the pancake, sweet and savory, leavened and unleavened. American pancakes are typically leavened with baking powder and didn’t become popular until the early 19th century. Before that, pancakes were made with cornmeal or buckwheat and sourdough starter.

“Silver dollar” pancakes originated in the United States in the late 19th century. They get their name from the silver dollar coins in the US, which were produced prior to 1979 because they are about the same size.

Other countries around the world have their own take on mini pancakes. Some of the most popular are South African plaatkoekies, which are served with golden syrup, Russian oladyi with raisins and apples, and the famous round Danish pancakes, æbleskiver.

How to Buy and Store Matcha Powder

High quality matcha powder is expensive, but like chocolate and olive oil, you get what you pay for. There are three general categories you can look for: ceremonial grade, cafe grade, and culinary grade. Which one you should purchase depends on your needs. If you are just using the matcha in recipes and not planning on drinking it, culinary grade should be fine. If you want to try matcha powder for cooking and drinking without investing a huge amount of money, go with cafe grade. If you are a tea connoisseur, spring for the good stuff and get ceremonial grade.

No matter which grade you choose be aware that matcha powder has an expiration date. Store in an airtight, light proof container and refrigerate after opening to extend the shelf life.

Bursting with the flavor of matcha green tea, these mini pancakes will delight you.

Instructions

  1. In a large bowl, whisk to combine the almond flower, erythritol, cinnamon powder, and matcha powder. In a separate large bowl, whisk to combine the almond milk and eggs.
  2. Pour the egg mixture into the almond flour mixture and whisk until fully combined and no lumps remaining. If needed, add additional almond milk, 1 Tablespoon (15 ml) at a time, until the batter is fully combined.
  3. Add 1/2 teaspoon (5 ml) of the melted ghee to a small non-stick skillet over medium heat. Add 1/4 cup (4 Tablespoons or 60 ml) of batter to the skillet. Spread the batter in the skillet to form a small pancake and cook until bubbles begin to form on the top of the pancake.
  4. Using a spatula, gently turn over the pancake and continue to cook an additional 2 to 3 minutes. Remove the pancake from the skillet and place on a paper towel-lined plate to absorb the excess oil. Continue to cook the pancakes, adding an additional 1/2 teaspoon (5 ml) of the melted ghee to the skillet before cooking each pancake, until all of the batter has been cooked. Keep the pancakes warm until ready to serve.
  5. Serve the silver dollars warm with a dusting of erythritol confectioners’ sweetener and topped with mixed berries.

Notes

Due to the fragile nature of the batter, we do not suggest you use a large pan, but instead use a miniature non-stick pan approximately 4-inches / 10cm in diameter for successful silver dollars.
